Roast the almonds in the oven for about 10-12 minutes, stirring them halfway through. They should become fragrant but be careful not to let them burn.
Let the roasted almonds cool for a few minutes.
Place the almonds in a food processor or high-powered blender.
Blend the almonds on high speed. Initially, they will turn into a coarse meal, and then eventually, it will start to form a creamy texture. Be patient; this process can take several minutes.
If the mixture seems too thick or dry, you can add 1-2 tablespoons of oil to help it reach a smoother consistency.
Add a pinch of salt if desired and blend again to incorporate.
Taste and adjust the salt or sweetness, if needed.
Transfer the almond butter to a jar and store it in the refrigerator. Enjoy your homemade almond butter on toast, in smoothies, or as a dip!
